Delicious Enchilada Casserole

This super delicious Enchilada Casserole is so good and easy to make! It’s so good we barely had any left overs. I’ve made it vegetarian, by using jack fruit, and you could make it vegan by using vegan cheese and yogurt. Or you can substitute out the Jack fruit for beef or chicken!

Preheat oven to 375° F (190° C). Grease a 9×9 inch baking dish. Mix tomato sauce, water, taco seasoning mix, and chili powder together in a saucepan; bring to a simmer over medium heat.

Mix in meat, black beans, corn and yogurt into the sauce.Pour mixture into greased pan, and sprinkle with cheese.

Mix up your cornbread package as instructed on box. Pour cornbread batter evenly over the mixture.

Place in preheated over for 30 minutes. Let cool for 10 minutes.
