Easy Enchilada Casserole

This delicious enchilada casserole can easily be made vegan! You can also swap out the jack fruit for 1 pound of your meat of choice.
- 1 15 oz can tomato sauce
- 1/4 th cup water
- 1 TB taco seasoning
- 1 1/2 TB chili powder
- 1 TB avocado oil
- 1 8 oz package jack fruit, ground beef or chicken strips
- 1 cup black beans drained
- 1 cup corn, fresh or canned
- 1/4th cup yogurt
- 1 cup shredded cheddar or mexican-style cheese blend, or more to taste
- 1 package cornbread mix (and the ingredients needed for it)
- Preheat oven to 375° F (190° C). Grease a 9×9 inch baking dish.
- Mix tomato sauce, water, taco seasoning mix, and chili powder together in a saucepan; bring to a simmer over medium heat.
- Mix in meat, black beans, corn and yogurt into the sauce.
- Pour mixture into greased pan, and sprinkle with cheese.
- Mix up your cornbread package as instructed on box.
- Pour cornbread batter evenly over the mixture.
- Place in preheated over for 30 minutes.
- Let cool for 10 minutes.
