Easy Enchilada Casserole

This delicious enchilada casserole can easily be made vegan! You can also swap out the jack fruit for 1 pound of your meat of choice.

Ingredients

  •  1 15 oz can tomato sauce
  • 1/4 th cup water
  • 1 TB taco seasoning
  • 1 1/2 TB chili powder
  • 1 TB avocado oil
  • 1 8 oz package jack fruit, ground beef or chicken strips
  • 1 cup black beans drained
  • 1 cup corn, fresh or canned
  • 1/4th cup yogurt
  • 1 cup shredded cheddar or mexican-style cheese blend, or more to taste
  • 1 package cornbread mix (and the ingredients needed for it)

Instructions

  1. Preheat oven to 375° F (190° C). Grease a 9×9 inch baking dish.
  2. Mix tomato sauce, water, taco seasoning mix, and chili powder together in a saucepan; bring to a simmer over medium heat.
  3. Mix in meat, black beans, corn and yogurt into the sauce.
  4. Pour mixture into greased pan, and sprinkle with cheese.
  5. Mix up your cornbread package as instructed on box.
  6. Pour cornbread batter evenly over the mixture.
  7. Place in preheated over for 30 minutes.
  8. Let cool for 10 minutes.
  9. Enjoy!
