This is one of my most popular recipes! Can you believe I used to hate avocados? Before I made my big diet change about 15 years ago, I didn’t like avocados and I never ate guacamole. Boy was I missing out! My grandmother had an avocado tree in southern California, and one day, after I had started eating way more fruits and vegetables my sister made me some “avocado toast” with mashed avocado on whole wheat toast with butter and sprinkled with garlic salt. It was so good, I was hooked. Since then, I’ve loved eating avocados in many different ways. I’ve even made whole meals out of the special guacamole below, so read on!
I love serving this with corn chips, carrots, sliced peppers and jicama for healthy dipping (or try deluxe version). This is very popular, so make extra for a group.
4 sm. or 3 med. ripe avocados
1-2 tsp lime juice (or lemon) or 3 drops lime essential oil
¼ C diced tomato
1 TB onion or scallions, diced (opt)
½ tsp sea salt
1 tsp cumin
½ tsp chili powder
1 small clove garlic, pressed(opt-If you like it hot!)
Scoop out avocado and mash in a bowl with a fork. Stir in remaining ingredients.
Add favorite salsa to mashed avocado.
This wonderful meal is great in a whole wheat or corn tortilla wrap, on salad or even over a baked potato.
To above great guacamole, add any combination of the following:
¼ C red or other color bell pepper, finely diced
1/4 C baby carrots, diced
¼ C jicama, diced
¼ C fresh cut or frozen corn kernels (defrosted)
¼ C zucchini, finely diced
Extra dash of seasonings
Get out the corn chips! It’s a party!
