How about a fiesta for your mouth! This is a do-it-yourself take on the rice found at a popular mexican grill restaurant chain.
This recipe is a long time coming, as it requires just the right amount of rice, essential oil, and cilantro. Cilantro essential oil just doesn’t give the right kind of flavor, but the Lime essential oil sure does! Plus, you just can’t beat the appetizing appearance of fresh chopped cilantro in white rice!
Pair this with some Honey Lime Grilled Chicken or use it to make a burrito bowl for yourself. Top it over a bed of lettuce, then add some shredded pork (or beef, or chicken), and finish with cheese, salsa, avocado, etc. Your mouth will thank you and then ask for seconds!
- 2 cups white rice (I used Jasmati)
- 4 cups bone broth (or water with 1 Tbsp. gelatin)
- 2 Tbsp. butter
- 1-2 Tbsp. fresh chopped cilantro (more or less to your liking)
- 1 drop Lime essential oil
- Salt to taste
Make up the rice using your Instant Pot (or favorite stove-top method).
For the Instant Pot, put the rice, butter, and bone broth in the pot, seal it, and select the Rice button.
Once the rice is done, stir in the fresh chopped cilantro and 1 drop Lime essential oil and salt to taste.
Serve as a side or in a main dish.
