I LOVE these healthy pumpkin cookies!
I lost the recipe for a while and made a different kind last year, but those were too heavy and dense. This recipe is more cake-like, so the cookies are lighter and moist. I love to make these on Halloween and hand them out to all the parents at our neighborhood Trunk or Treat.
1/2 C butter, softened
1 egg
3/4 C honey, liquid or softened
1 C pumpkin (homemade, well-mashed or blended or from a can)
2 1/4 C flour (I use whole white wheat flour)
2 tsp baking powder (non-aluminum)
1 tsp ground allspice
2 tsp ground cinnamon
1/4 tsp sea salt
1/3 C semi-sweet chocolate chips
1/2 C walnuts, chopped (optional)
1/3 C raisins
2 drops ginger essential oil (optional)
