Healthy, Yummy Zucchini Bread

Here is my mother-in-law’s awesome recipe for healthy, yummy zucchini bread. We are lucky she was willing to share it with us!

Ingredients

Scale
  • 6 C white wheat flour
  • 2 tsp salt
  • 2 tsp baking soda
  • two tsp baking powder
  • 2 TB ground cinnamon
  • 2 C light olive or vegetable oil
  • 5 ½ C brown sugar or sucanat
  • 5 eggs
  • 2 TB vanilla extract
  • 67 C grated zucchini
  • 2 C chopped walnuts (optional)
  • 2 C semi-sweet chocolate chips (optional)
  • 3 drops Cinnamon Essential Oil (optional)

Instructions

Preheat oven to 325. Grease and flour 4 bread pans.


Sift flour, salt baking powder, baking soda and cinnamon together in a bowl.

Beat eggs, oil, sugar and vanilla together in a large bowl.

Add dry ingredients to creamed mixture. Stir in zucchini & extras until well mixed. Pour into pans.

Bake for 45-60 minutes or until knife comes out clean. Cool in pan for 15 min.
