Frozen Yogurt Nibblers

How about frozen yogurt nibblers for those littles while it’s still warm outside? A treat that not only will they love to eat, but they also can help with the making of or do it themselves with a little direction. Food always tastes better to kids when they make it themselves, right?

  1. If using silicone molds get them out and ready or place parchment paper on a cookie sheet.
  2. Place fruit in a food processor, and blend to desired consistency.
  3. Mix fruit, yogurt, and essential oil together in a small bowl.
  4. Place water (or orange juice) in a saucepan. Sprinkle gelatin over the liquid and let sit for a few minutes. Place saucepan over low heat, stirring constantly for about 3 minutes or until the gelatin is completely dissolved. Immediately whisk the gelatin water into the fruit and yogurt mixture.
  5. Carefully spoon the yogurt mixture into prepared molds or pour the yogurt mixture into a plastic bag, cutting off a small corner, and pipe onto prepared parchment paper in bite-size pieces.
  6. Place silicone molds on a cookie sheet and put in the freezer for a couple hours. Same goes if using the parchment paper lined cookie sheet.
  7. Once frozen, quickly peel off yogurt bites and put in re-sealable plastic bag or container and return to freezer until time to serve. They get soft fairly quickly so only take out what you need!

Notes

The water/gelatin mixture is optional, but adding the gelatin helps the yogurt bites keep their shape longer. For small children, adding this small amount of gelatin is especially helpful if they take a long time to eat the pieces before they thaw in their hands. If using a seedy fruit like blackberry, I suggest straining the fruit puree through a mesh strainer to get all the seeds out before mixing it with the yogurt.

If you find the yogurt a bit too tart, you could increase the amount of fruit and/or add some sweetener such a liquid stevia or raw honey.
