Bread Flour Recipe

Bread flour has more rising power than the plain one. It’s sooooooo easy to make your own!

Ingredients

  • 6 cups white wheat flour (or you can substitute 2 cups red wheat flour)
  • 1 TB gluten flour (or vital wheat gluten)
  • one TB barley malt
  • 1 tsp vitamin C powder (citric acid)

Instructions

I usually use hard white wheat flour for bread and pizza dough. Red wheat has better flavor, but is much heavier. When we use it, we only use about 1/3 of the recipe amount and use white wheat for the rest.

Notes

For sweet baking projects, desserts, waffles, etc. I use pastry flour, which is made from finely ground, soft white wheat. These can all be ordered from Azure Standard.
