Strawberry Lemonade Buttercreme Frosting

Today I come to you with a Strawberry Lemonade Buttercreme Frosting recipe that will make you eagerly await summer!

Ingredients

Scale
  • ½ cup grass fed butter, softened to room temperature
  • ¾ cup freeze dried strawberries, blended to a fine powder (try raspberry also)
  • 1 squirt Liquid stevia (to taste) (I used NuNaturals Vanilla NuStevia)
  • 1 drop Lemon essential oil (to taste)

Instructions

  1. Blend up the freeze dried strawberries into a fine power.
  2. In small bowl combine softened butter and strawberry powder, stirring to combine.
  3. Blend in the lemon essential oil and liquid stevia.
  4. Frost and enjoy!

Notes

·         I used my Magic Bullet to blend up the freeze dried strawberries though a blender or food processor might work just as well.

·         I tried using the Magic Bullet to combine the powder and butter but it was just too stiff. You might be able to do this if the butter was almost melted.

·         To pipe this frosting try sticking it in the fridge until stiff but still pliable. When you pipe it, make sure to return the bag to the fridge every now and then as your hands will soften the butter and it won’t be as stiff.

·         For a dairy free option, try it with palm shortening instead of butter.
