Red, White, & Blueberry Popsicles

I love this time of year with the patriotic songs, decorations, and fireworks. And there is nothing so beautiful as to see the Stars & Stripes waving in the wind! Help capture the magic of patriotism with these red, white, & white blueberry popsicles that will cheer you up, cool you down, and provide a wealth of nutrition all at the same time. This colorful treat has no added sugar but is naturally sweetened by fresh fruit. Essential oils also aid in giving a depth of flavor with each level of color.

Raspberries are a rich source of fiber and antioxidants like vitamins C, A, & E, as well as many minerals.

Bananas also contain a good amount of fiber but also are a great source for potassium & B6 and a moderate source of vitamin C and other minerals.

Blueberries are among the highest anti-oxidant fruit and contain good amounts of minerals like manganese and potassium.

Extra Nutrition

 

I am always trying to find ways to sneak extra nutrition into my family and this recipe is no exception. Popsicles lend themselves really well for adding in some gelatin. I wrote a bit about it’s benefits here. Also, rather than just plain water, why not use a little coconut water? Don’t fear, if your family doesn’t care for coconut water much then they will never know as the flavor of the fruit covers it up. Coconut water is a great re-hydrating drink with its electrolytes and minerals and a lot lower in sugar than popular sporty drinks.

Red, White, & Blueberry Popsicles

Don’t let the fancy layers fool you. This recipe is incredibly easy to put together! Although this recipe only made 4 popsicles, I found it much simpler to use a whole pint of fruit and a whole banana instead of having to measure out a certain amount and have leftovers. So you could certainly double or triple this recipe to make more! With each layer just simply fill your popsicle mold 1/3 of the way up. And any leftover fruit puree you had could be easily turned into a smoothie by adding a bit more coconut water. So go enjoy a delicious, nutrient dense treat that will inspire patriotism!

For Red layer:

  • Puree raspberries, ½ tsp. gelatin, 1 drop lemon essential oil, and enough coconut water to form a thick paste. Spoon equally into 4 popsicle molds.

For White layer:

  • Puree banana and enough coconut water to form a thick paste. Carefully spoon into molds on top of the red layer.

For Blueberry layer:

  • Puree blueberries, ½ tsp. gelatin, 1 drop wild orange essential oil, and enough coconut water to form a thick paste. Carefully spoon on top of white layer.
  • Put tops on popsicle molds and freeze 4-6 hours or until frozen through.

Notes: Start very small with the coconut water (1 tsp.) and add more as needed. If it’s too runny then the layers will mix together!

Different popsicle molds will hold different amounts, so just fill each layer about 1/3 of the way up the mold you are using.
