We’ve been getting zucchini from the farmer’s market, our friends garden and finally, from our own garden. If you do not watch them carefully, they can get the size of a baseball bat. Here is my mother-in-law’s awesome recipe for healthy, yummy zucchini bread. We are lucky she was willing to share it with us!
Yummy Zucchini Bread Recipe
6 C white wheat flour
2 tsp salt
2 tso baking soda
2 tsp baking powder
2 TB ground cinnamon
2 C light olive or vegetable oil
5 ½ C brown sugar or sucanat
2 TB vanilla extract
6-7 C grated zucchini
2 C chopped walnuts (optional)
2 C semi-sweet chocolate chips (optional)
Preheat oven to 325. Grease and flour 4 bread pans.
Sift flour, salt baking powder, baking soda and cinnamon together in a bowl.
Beat eggs, oil, sugar and vanilla together in a large bowl.
Add dry ingredients to creamed mixture. Stir in zucchini & extras until well mixed. Pour into pans.
Bake for 45-60 minutes or until knife comes out clean. Cool in pan for 15 min.
She hands these loaves of yummy zucchini bread out to neighbors and friends everyday. Delish!
