Bread flour is flour that has more rising power than plain flour. It’s sooooooo easy to make your own!
To makeyour own healthy bread flour, combine the following:
- 6 cups white wheat flour (or you can substitute 2 cups red wheat flour)
- 1 TB gluten flour (or vital wheat gluten)
- 1 TB barley malt
- 1 tsp vitamin C powder (citric acid)
I usually use hard white wheat flour for bread and pizza dough. Red wheat has better flavor, but is much heavier. When we use it, we only use about 1/3 of the recipe amount and use white wheat for the rest.
For sweet baking projects, desserts, waffles, etc. I use pastry flour, which is made from finely ground, soft white wheat. These can all be ordered from Azure Standard.
